Bumbu Kuning (Base Indonesian Yellow Spice Paste) is a traditional Indonesian recipe for a classic curry spice blend with shallots, candlenuts, galangal and fresh turmeric. This is one of the classic Indonesian spice pastes that's typically used for: kare ayam (coconut chicken curry), soto ayam (chicken soup) or you can even use it to marinate recipes such as urab salad or even sate skewers.
Ingredients:
250g Shallots
125g Garlic
100g Fresh turmeric
50g Candle nut
1 tsp black Peppercorns
1 tsp salt
12mm (1/2 in) piece of galangal, scraped and chopped
12mm (1/2 in) piece of ginger,
1 lemongrass stalk, peeled to reveal the core and chopped
1/2 tsp coriander seeds
1/2 tsp cumin seeds
Method:
Add the coriander seeds, cumin seeds and black pepper to a stone mortar and pound to a powder with a heavy pestle.
Now add the candlenuts and pound to a paste. Next add the shallot and garlic, again pounding to a smooth paste.
Add the remaining ingredients, one by one, pounding to a smooth paste after each addition.
Transfer to a jar and store in the refrigerator if not using immediately, it will keep for 2 weeks. You can freeze for longer-term storage.
