Brunswick Stew

This is a classic American chicken-based stew.

Ingredients:

1kg chicken, cut into cubes
4 ripe tomatoes, peeled and chopped
1 large onion, chopped
1 large green bell pepper, chopped
1 large red bell pepper, chopped
1 green chilli, de-seeded and chopped
1 garlic clove, finely chopped
227g okra, sliced
75g butter
300g sweetcorn kernels
3 tbsp plain flour
salt and freshly-ground black pepper, to taste

Method:

Put the chicken in a pan, along with 1l water. Bring to the boil, then simmer for 30 minutes.

Now add the tomatoes, onions, green and red peppers, garlic, okra, chilli and butter. Simmer covered for 30 minutes, stirring occasionally. Add the sweetcorn and season with salt and pepper. Whisk the butter in a little cold water, and stir in a little of the cooking liquid, before stirring the mixture into the stew. Simmer for a further 15 minutes, stirring occasionally.

Serve with Southern Fries, pasta or on a bed of rice.
