Brownie Swirl Cheesecake is a traditional American recipe for a classic cheesecake made from cream cheese, sugar and melted dark chocolate that's bound with eggs, flavoured with vanilla extract and baked on a chocolate brownie base. Ingredients:
250g Brownie Mix
500g Cream Cheese, Softened (or you can use my home-made cream cheese recipe to prepare your own)
100g sugar
1 tsp vanilla extract
2 large eggs
150g milk chocolate chips, melted
Method:
Grease the base of a 22cm diameter springform cake tin. If using boxed brownie mix then make as directed on the package. If using this site's brownie mix then stir in 1 egg, 30ml vegetable oil and 30ml water and stir to a smooth batter. Turn this batter into the springform pan then transfer to an oven pre-heated to 170°C and bake for 15 minutes.
In the meantime, combine the cream cheese, sugar and vanilla extract and beat until smooth. Add the eggs, one at a time, beating thoroughly to combine after each addition then pour the filling over the brownie base. Spoon the melted chocolate over the cream cheese mixture then use a rounded knife to cut through the cheese and chocolate layers several times to achieve a marbled effect.
Return to the oven and bake for 35 minutes. Remove from the oven, allow to cool slightly then loosen the sides of the tin. Allow to cool completely before removing the pan rim. Transfer to the refrigerator to chill for at least 2 hours before serving. If desired, you can decorate with whipped cream.
