Ingredients:
300g flour
175g butter at room temperature
250g sugar
1 egg
2 tbsp molasses
finely-grated zest from ½ lemon
½ tsp baking soda
½ tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
1/2 tsp salt
Method:
Cream together the sugar and butter in a bowl until pale and creamy.
In a separate bowl mix all your dry ingredients flour, spices, lemon zest, salt, baking soda.
Now add all the dry ingredients to the creamed butter mixture. Add one egg and 2 tbsp of molasses, then mix to combine all the ingredients.
Scoop out about 1 tbsp of the dough and roll into a ball, repeat with the remaining dough. Place the dough balls on a baking tray lined with parchment paper.
Allow the dough balls to chill in the refrigerator for about an hour.
Preheat your oven to 170°C.
Remove the baking trays from the refrigerator and place immediately into the centre of your pre-heated oven. Bake for 15 to 20 minutes until nicely golden brown.
Transfer to a wire rack to cool before serving or storing.
