Bran Muffins: Classic New Zealand recipe for a breakfast muffin made with bran flakes and flavoured with vanilla, shown piled on a plate.

Ingredients:

1 tbsp golden syrup (corn syrup)
60ml water
240ml skimmed milk
1 tsp baking soda
1/2 tsp vanilla extract
1 tbsp oil
1 egg
160g bran flakes
200g wholemeal flour
2 tsp sugar

Fruit variations:


80g sultanas
or 80g chopped dried apricots
or 1 mashed ripe banana

Method:

Place the golden syrup, sugar and water in a pan. Heat slightly then add the milk along with the baking soda. Stir to incorporate then add the vanilla and oil. Beat the egg then add egg. Take off the heat and beat the egg to incorporate.

Put the flour and bran in a bowl and make a well. Add the liquid ingredients and stir to mix then add the fruit (if using). Spoon into greased muffin tins (filling no more than 3/4 full) and place in an oven pre-heated to 200°C (400°F/Gas Mark 6) for twelve minutes, or until golden and slightly springy to the touch.
