Ingredients:

For the Filling:
450g fresh blackberries
120g sugar

For the Dough:
60g butter
30g sugar
1 egg, beaten
120g plain flour
1/4 tsp bicarbonate of soda
pinch of salt
2 tbsp milk
2 tbsp freshly-grated lemon zest

Method:

Combine the blackberries in a pan with a little water. Bring to a gentle simmer and cook until the fruit is soft. Transfer to a pie dish and sprinkle the sugar over the top. Set aside as you prepare the dough topping.

Cream together the butter and sugar until soft and fluffy then add the egg and beat thoroughly to combine. Stir in the flour and milk along with the salt, bicarbonate of soda and lemon zest. Mix thoroughly then spread this mixture over the fruit.

Transfer to an oven pre-heated to 180°C and bake for about 20 minutes, or until heated through and golden on top. Serve hot with milk or custard.
