Boules de Bananes (Banana Fritters) is a traditional Guinean (from Guinea-Conakry) recipe for a classic accompaniment of boiled green bananas that are turned into a paste, flavoured with spice, shaped into balls and deep fried to cook. Though this may sound like a dessert, it's actually a recipe for an accompaniment.
Ingredients:
6 green (ie unripe) bananas
ground cinnamon, ground ginger and freshly-grated nutmeg, to taste
salt, to taste
oil for frying
Method:
Peel the bananas, place in a pan of boiling water and cook for about 30 minutes, or until tender. Drain the bananas, place in a bowl and crush with the salt then mash to a smooth dough.
Take the banana dough and roll into a round of about 6cm in diameter then use a sharp knife to slice into disks about 1cm thick.
Heat oil in a pan, add the banana dough pieces and fry for a few minutes or until golden brown on both sides.
Drain on kitchen paper and serve with a tomato sauce and fried fish.
