Also known as Pika Siboyo, this is the classic accompaniment of pickled onion and chillies from the island of Bonaire in the Caribbean. Siboyo den pika” literally translates to “onions in hot sauce. This vinegar based spicy pickled onion is always a welcomed addition to any Antillano table.
Ingredients:
2 onions (you can use white or red onions, depending on preference), sliced into strips
1 spicy chilli (scotch bonnet or habanero), finely minced (or to taste)
1 tbsp of salt
1 tsp sugar
3 pimento seeds (allspice berries)
100ml water
100ml white vinegar
Method:
Pour the water into a small saucepan and bring to a simmer then add in the allspice berries, sugar and salt.
Stir to combine and when the sugar and salt have dissolved, turn off the heat and pour in the white vinegar.
Fill a tall, sterilized, glass jar with the sliced onions and diced chilli, then pour over liquid mixture the liquid mixture, making sure you have enough to completely submerge the onions.
Secure with a vinegar-proof lid and set aside for an hour. This can be served immediately as a quick pickle, or it can be set aside to mature for a week.
Once opened, store in the refrigerator. This is a classic spicy accompaniment to almost any Bonairean dish.
