Bolita di Keshi (Cheese Balls) is a traditional Aruban recipe for a classic snack of cheese mixed with cornflour and bound with eggs that are shaped into balls and deep fried before serving. Ingredients:
450g mature cheese (Cheddar or Oude Boerenkaas are good)
450g soft white cheese (eg Ricotta, Feta, Keshi di Buriko, Fromage Blanc, Queso Blanco etc)
6 eggs, beaten
5 tbsp cornflour (cornstarch)
Method:
Grate the cheeses into a bowl then stir-in the eggs and cornflour. Beat until smooth then bring the mixture together and shape into small bowls; these will keep for a long time in the freezer.
When ready to cook, drop the balls into hot, deep, fat and fry until golden. Serve hot, accompanied by a hot sauce.
