Bofloto (Soufflé Doughuts) is a traditional Togolese (from Togo) recipe for a classic batter lightened with beaten eggs that's deep fried in oil to cook (just like doughnuts). The full recipe is presented here and I hope you enjoy this classic Namibian version of: Soufflé Doughuts (Bofloto).

Ingredients:
125ml water
1 pinch of salt
8g powdered sugar
50g butter
60g plain flour
2 eggs
oil for deep frying
Method:
Combine the water, salt, sugar and butter in a pan. Bring to a boil and immediately it begins to boil dump in all the flour. Stir with a spatula until smooth and cook for 2 minutes, stirring constantly, or until the dough comes away from the sides of the pan.
Take off the heat and set aside to cool. When cooled to room temperature, add the eggs, one at a time, beating well to incorporate some air with each egg.
The final dough should be fairly stiff.
Heat oil in a deep fryer to 150°C. Form the dough into balls and drop these, into the oil. Increase the heat to 180°C and cook the doughnuts until golden brown all over.
