This is Haitian blancmange, a condensed milk and coconut milk based dessert set with gelatine.

Ingredients:

2 envelopes of gelatine
125ml of water
250ml sweetened condensed milk
500ml evaporated milk
250ml coconut milk
1 tbsp vanilla extract
1 tsp freshly-grated nutmeg
Toasted shredded coconut for garnish

Method:

Place the water in a bowl and sprinkle over the gelatine and set aside for 10 minutes so the gelatine absorbs the water.

Combine the condensed milk and evaporated milk in a saucepan. Add the gelatine water then place over low heat. Warm gently, stirring until the gelatine has all dissolved. Take off the heat then stir in the vanilla extract, nutmeg and coconut milk.

Pour into a dish then allow to cool before transferring to the refrigerator and chilling until the blan manje has solidified.

Some people serve their blan manje with a prune sauce.
