Fish blaff, a delicious Guadeloupe recipe made with fish cooked in a very fragrant court-bouillon, is a delicious treat.
Ingredients:
1kg white fish steaks
3 cives [branching onion], chopped
2 onions, sliced
one garlic clove, crushed
juice of one lemon
one lime, halved
4 cloves
2 allspice leaves
1/4 habanero chilli
2 sprigs of theme
6 sprigs of parsley
salt and freshly-ground black pepper, to season
Method:
Preparing the court-bouillon: Bring a pan of water to a boil. Add the cloves, chilli, chopped cives, allspice leaves, thyme, parsley and sliced onions. Season to taste with salt and freshly-ground black pepper then bring to a simmer, cover and cook for 30 minutes.
Preparing the blaff: Rub the fish steaks with a halved lime, then add them to the court-bouillon. Simmer for fifteen minutes, then stir in the lemon juice and the crushed garlic clove.
Serve the fish with its fragrant broth (remove the allspice leaves before serving).
