Ingredients:

140g Chocolate Wafer Crumbs
3 tbsp butter, melted
500g cream cheese, softened (or you can use my home-made cream cheese recipe to prepare your own)
125g sugar
2 large eggs
180g dark chocolate, chopped and melted
1/4 tsp almond extract
650g Cherry Pie Filling
whipped cream, whipped, to decorate

Method:

Combine the crumbs and melted butter in a bowl then press into the base of a 22cm diameter spring-form cake tin. Transfer to an oven pre-heated to 170°C and bake for 10 minutes. Meanwhile, whisk together the cream cheese and sugar until smooth then add the eggs, one at a time, beating thoroughly to combine after each addition. Blend in the melted chocolate and almond extract before pouring the filling over the prepared crust.

Transfer to the oven and bake for 45 minutes. Remove from the oven, allow to cool slightly then loosen the sides of the tin. Allow to cool completely before removing the pan rim. Transfer to the refrigerator to chill for at least 2 hours. Immediately before serving top the cake with the cherry pie filling and the whipped cream.
