Ingredients:
500ml red hibiscus flowers (bissap)
2.5l water
100g sugar
1 tsp vanilla extract
Method:
Rinse the hibiscus flowers then place in a large pan and pour over the water. Bring to a boil and continue boiling for several minutes, or until the water is deeply coloured.
Drain the liquid through a fine-meshed sieve (you can dry the flowers for re-use, typically they can be used three or four times). Add sugar to taste and mix in the vanilla extract.
Allow to cool then chill thoroughly before serving.
