Beyaz Peynirli Yumurta (Eggs with Feta Cheese) is a traditional Turkish recipe for a classic breakfast dish of fried feta cheese into which an egg is broken and fried. Ingredients:
1 egg
1 tsp butter
100g Feta cheese, crumbled
45g parsley, chopped
1 pinch dried oregano, crumbled
1 pinched crushed chilli pepper
salt and black pepper, to taste
Method:
Melt the butter in a small covered frying pan or skillet. Combine the Feta cheese and parsley in this, make a well in the centre and break the egg into this. Cover and cook gently until the egg white has set, but the yolk is still liquid.
Transfer to a palate, sprinkle with the oregano, chilli and seasonings and serve with bread, preferably Turkish Bread.
