Bermudan Fried Fish

Ingredients:

1.5kg fish fillets
lemon juice
salt, freshly-ground black pepper and paprika (to taste)
4 eggs beaten in a little milk
120g flour
120g breadcrumbs
cooking oil
tartar sauce to accompany

Method:

Squeeze the lemon juice over the fish fillets then set aside to marinate in the refrigerator for 20 minutes.

Now season the fish with salt, black pepper and paprika.

Take three bowls. Place the egg and milk mixture in one, the flour in the second and the breadcrumbs in the third.

Take the fish fillets and dip first in the flour, then in egg and milk, and finally in the breadcrumbs. If you like your fish well breaded dip back in the egg and milk then coat in the breadcrumbs once more.

Fry in hot oil until golden. Serve with Tartar Sauce.
