Bermudan Plantain Curry

Ingredients:

2 tbsp oil
2 onions, chopped
3 tbsp sultanas
1 apple, peeled, cored and diced
1/2 tsp salt
2 tbsp plain flour
1 tbsp curry powder
250ml coconut milk
500ml water
4 green plantains, sliced (or 6 green bananas)
4 hard boiled eggs, quartered

Method:

Place a wok or pan over medium heat. Once hot, add the oil and use to sauté the onions for about 4 minutes, until soft and translucent. Add the sultanas, apple and salt then scatter over and stir in the flour and curry powder. Cook, stirring constantly for 3-4 minutes.

Reduce the heat to low and slowly work in the coconut milk and water a little at a time, stirring constantly until thoroughly incorporated.

Add the plantain and bring to a boil. Reduce to a simmer and cook for 15 minutes, until plantains are thoroughly cooked and tender. Add the egg pieces and cook for 1-2 minutes, until heated through.

Serve with rice and/or rotis.
