Beignets de Banane Malienne (Malian Banana Fritters): A Malian recipe for a snack of a banana and maize flour dough deep fried in oil to cook.
Ingredients:
1kg ripe bananas
250g maize flour
oil for deep frying
Method:
Peel the bananas, then mash in a bowl until smooth. Sift over the maize flour and work into the mashed bananas until you have a smooth, homogeneous dough.
Shape the dough into rough balls (about 1 tbsp each). Heat oil in a large pan or deep fryer to 180°C. When the oil is hot, add the banana fritters, in batches, frying until evenly browned all over and slightly crisp on the outside.
Remove with a slotted spoon and drain on kitchen paper as you cook the next batch.
