Beef and Cabbage Soup: Classic British recipe for a soup of beef and a beef bone with cabbage, carrot, celery and onion in a tomato-flavoured base.

Ingredients:

1 beef soup bone
300g stewing beef, diced
3l water
2 bayleaves
1 small head of cabbage, cored and coarsely chopped
4 medium carrots, scraped and coarsely chopped
5 celery sticks, coarsely chopped
1 large onion, chopped
400g tinned tomatoes (with juice), chopped
180ml passata (tomato juice)
salt and freshly-ground black pepper, to taste

Method:

Combine the beef bone, stewing beef and water in a pan. Add the bayleaves then bring to a simmer, cover and cook for about 150 minutes, skimming the surface from time to time.

At this point remove the bone then add the cabbage, carrots, celery and onion. Return to a simmer and cook for a further 30 minutes then add the tomatoes and tomato juice.

Adjust the seasonings to taste, bring to a boil, cook for 5 minutes then ladle into warmed soup bowls and serve.
