Bedmi Aloo

This is a spicy vegetarian potato curry typically served for breakfast.

Ingredients:

2 large potatoes, boiled, peeled and coarsely smashed with a fork (you need big chunks)
3 tbsp cooking Oil
½ tsp Cumin seeds
½ tsp Coriander seeds (sabut dhaniya), coarsely crushed
½ tsp Fennel seeds
1 Dried red chilli
1 Green chilli, finely chopped
2 medium tomato, puréed
Salt, to taste
¼ tsp Turmeric powder
1 ½ tsp Red chilli powder
375ml Water
1 tsp Amchur powder (dried mango powder)
½ tsp Garam masala
2 tbsp Coriander (cilantro) leaves, coarsely chopped

Method:

Boil the potatoes in their skins until tender. Drain and set aside until cool enough to be handled. At this point peel them and roughly smash them into big chunks.

Place a pan over medium heat, and one hot add in the oil and use to fry the cumin seeds, coriander seeds, fennel seeds and dried chilli for about 60 seconds, until aromatic. Now add the green chilli and fry for another minute.

Mix in the tomato purée and cook until it becomes thick and the oil starts to separate at the sides.

Add salt to taste, along with the turmeric powder, red chilli powder. Mix thoroughly to combine and cook for a minute. Stir in the mashed potatoes and water. Bring to a simmer and cook for 4-5 minutes.

Finally, mix in amchur and garam masala powder then take off the heat, turn into a warmed serving bowl, garnish with the chopped coriander leaves and serve. Typically this is served accompanied by bedmi puri.
