This is the classic green basil pesto that makes an excellent and simple sauce for pasta. Simply stir the pesto into the pasta of your choice, top with shredded ham and cheese then serve.
Ingredients:
250g fresh basil leaves
70g freshly-grated Parmesan or Pecorino Romano cheese
120ml extra-virgin olive oil
75g pine nuts
3 garlic cloves, minced
salt and freshly-ground black pepper, to taste
Method:
Combine the basil leaves and pine nuts in a food processor. Pulse a few times to chop then add the garlic and pulse a few more times.
Turn the food processor fully on and add the olive oil in a steady stream then add the cheese and pulse again until thoroughly blended. Season with salt and black pepper then pulse to combine.
Either use immediately or store in a jar in the refrigerator.
