Bärcrostini (Berry-topped Crostini) a Classic Swedish recipe for a dessert dish of grilled buttered baguettes topped with a creme fraiche, sugar, cinnamon and fresh berry mix.

Ingredients:

2 or 3 slender baguettes
150g butter
600ml crème fraîche
80g powdered sugar
1 tbsp ground cinnamon
1.2kg fresh berries (eg raspberries, strawberries, blueberries, cloudberries)
mint or lemon balm, to garnish

Method:

Pre-heat your grill. Slice the bread at the bias (ie diagonally) into thin ovals. Spread these with butter then place on a grill rack and cook for about 1 minute, or until lightly toasted.

Allow the bread to cool then spread over the crème fraîche. Sprinkle over the powdered sugar and ground cinnamon then top with the berries.

Garish with sprigs of mint or lemon balm, sprinkle over some icing sugar and serve.
