Barbecued Baked Apples: Classic British recipe for a classic dessert of apples stuffed with nuts, cherries, ginger and Amaretto that are cooked in foil parcels on a barbecue.

Ingredients:

4 medium-sized cooking apples (Bramleys are good)
25g walnuts, chopped
25g ground almonds
25g muscovado sugar
25g cherries, pitted and chopped
25g stem ginger, chopped
1 tbsp Amaretto
50g butter
natural yoghurt, to serve

Method:

Core the apples, either with a sharp knife or a corer. Score around the centre of each apple, cutting through the skins (this will help the skins from splitting during cooking).

For the filling, mix together the walnuts, almonds, sugar, cherries, ginger and Amaretto in a small bowl. Spoon some of this mixture into the centre of each apple, pushing it down into the hollowed-out cores.

Mound any left-over filling on top of the apples.

Arrange each apple on its own square of double thickness kitchen foil then dot generously all over with butter.

Gather up the foil ends and seal the apple in its own parcel, ensuring that each apple is completely enclosed.

Place the apples on a barbecue rack set over hot coals and cook for between 25 and 30 minutes, or until tender.

Transfer the apples to warmed, individual, serving plates. Serve with plenty of natural yoghurt.
