Baobab Cocktail

Baobab Cocktail is a traditional Guinean recipe (from Guinea-Conakry) for a classic drink of baobab pulp dissolved in a water that's sweetened and blended with milk and pineapple juice before serving. Despite being called a 'cocktail' this drink made from baobab fruit pulp (known as 'bouye' in Senegal and 'monkey bread in English) is actually non-alcoholic and a refreshing blend of the slightly astringent pulp in a mix of water, milk and pineapple juice sweetened with sugar.

Ingredients:

250g baobab fruit pulp
750ml water
500ml fresh milk
500ml pineapple juice
100g sugar
50g vanilla sugar

Method:

Mix the baobab fruit pulp with the water, cover and set aside to infuse for 30 minutes. After this time stir the pulp to dissolve then strain through a fine-meshed sieve to remove any seeds and fibres.

Pour the baobab liquid into a bowl and stir in the milk. Add the pineapple juice, mix well and then stir in the vanilla sugar and then the sugar to taste.

Chill in the refrigerator for at least 2 hours.

Serve well chilled over ice.

Note that in Guinea this is typically made from fresh pineapple that's puréed in a blender and strained through a sieve.
