Ingredients:

4 green plantains, peeled and cut into 2cm discs
salt, to taste
oil to fry

Method:

Add the plantains to a large pan of salted water and allow to soak for 1 hour. At the end of this time drain the discs and dry with a cloth.

Fry gently in vegetable oil until tender then transfer to a chopping board and press or pound until they are flattened to half their original thickness.

Return to the oil in the pan and fry once more until golden brown and crusty. Serve hot.
