Banana Sizzles: Classic British recipe for a barbecue dessert of bananas barbecued in their skins and served with a sweetened rum butter.
Ingredients:
3 tbsp butter, softened
2 tbsp dark rum
1 tbsp orange juice
4 tbsp dark muscovado sugar
pinch of ground cinnamon
4 bananas
strips of orange zest, to decorate
Method:
Beat together the butter, rum, orange juice, sugar and cinnamon in a bowl until well combined and smooth.
Place the bananas (still in their skins) on a barbecue rack over hot coals. Cook, turning frequently, for about 8 minutes, or until the skins are blackened.
Transfer the bananas to serving plates then slit the skins, cutting partially through the skins lengthways.
Divide the rum butter between the bananas, garnish with the strips of orange zest and serve.
