Banana Ice Cream II is a traditional British recipe for a classic dessert of an ice cream made from a blend of ripe bananas, water, sugar, lemon juice and double cream which is churned in an ice cream maker. For this ice cream you need the ripest possible bananas, as they will give you by far the best flavour.
Ingredients:
4 very ripe bananas
100ml water
100g sugar
3 tbsp fresh lemon juice
250ml double cream
Method:
Add the sugar and water to a saucepan. Heat gently until the sugar dissolves then bring to a boil and immediately take off the heat then set aside to cool. Once the syrup is cold peel the bananas, chop roughly and add to a food processor along with the lemon juice.
Purée until smooth then add the syrup and process. Turn into a bowl and mix in the double cream. Pour the mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
