Baked Salmon

Ingredients:

2kg whole salmon, cleaned, scaled and gutted
2 spring onions, roughly chopped
3 sprigs of dill
1/2 lemon, sliced thinly
6 black peppercorns
60ml dry white wine
3 bayleaves

Method:

Rinse the salmon under cold, running, water then pat dry. Measure the fish against your baking dish. If it's too large, trim off the head.

Stuff the body cavity with the spring onions, dill, lemon slices and black peppercorns.

Double-up a large piece of foil then brush with oil. Lay the salmon on the foil then sprinkle the wine all over the salmon and arrange the bay leaves on top of the fish. Fold the foil over the salmon and wrap-up tightly.

Place the fish in a shallow baking dish then transfer to an oven pre-heated to 180°C and bake for 30 minutes. Turn the oven off at this point and leave the salmon in the oven for 45 minutes as it cools (with the door tightly closed).

After this time remove the salmon form the oven and unwrap the foil. Carefully peel away the skin from the salmon on the top side then flip the fish onto a serving dish and remove the skin from the other side.

Pull away any fins and visible bones. Serve at room temperature, garnished with lemon slices. Accompany with tarragon mayonnaise.
