This is a classic Bajan cake with fruit that's typically served as a dessert.
Ingredients:
175g brown sugar
50g butter or shortening
50g soft margarine
250g self-raising flour
pinch of salt
225g freshly-grated coconut
50g raisins, chopped
50g cherries, chopped
1 tbsp freshly-grated
nutmeg
1 tbsp almond essence
300ml evaporated milk
50ml water
2 tbsp sugar
Method:
Cream together the sugar, butter and shortening (or butter) in a large bowl then add the flour, salt, grated coconut, raisins, and cherries. Add the nutmeg and almond essence then mix well. Now add the evaporated milk and stir to combine. Finally add just enough water to bring the mixture together as a firm dough. Knead the dough lightly then divide between two 28 x 12cm loaf pans that have been well greased.
Place in an oven pre-heated to 180°C and bake for about 1 hour, or until nicely browned on top and a skewer inserted into the centre of the cake emerges cleanly. Leave to cool in the tin until you can handle then turn out onto wire racks and allow to cool completely before slicing and serving.
