Bacon and Potato Pie

This isn't really a pie, of course. In actuality it's much more like a Yorkshire pudding, where bacon and potatoes are baked in a flour, egg and milk batter.
Ingredients:
8 rashers of bacon
225g (1/2 lb) potatoes
30g (1 oz) onion, finely chopped
300ml (1 1/4 cups) milk
30g (1 oz) plain flour
2 eggs
15g (1/2 oz) dripping or bacon fat
salt and freshly-ground black pepper
Method:
Remove the rinds from the bacon rashers then chop the bacon into small pieces. Peel the potatoes and shred finely then place in a cloth and wring out any excess moisture.
Mix together the bacon, potatoes and onion in a bowl then scatter over the flour and stir to combine. Beat together the eggs in a separate bowl then whisk in the milk and season to taste with salt and black pepper.
Stir the liquid into the potato and bacon mix. Add the dripping or bacon to a shallow tin. Place on the hob and heat until smoking. Pour in the bacon and potato mix then transfer to an oven pre-heated to 200ÂșC and bake for about 45 minutes, or until well risen and golden brown on top.
Cut as you would a Yorkshire pudding. Serve hot, garnished with a generous dollop of cream and accompanied by boiled peas.
