Bacon Koftas: Classic British recipe for a barbecue dish of sausages made from bacon with breadcrumbs, egg whites and lemon zest that are coated in chopped nuts before being grilled on a barbecue.

Ingredients:

1 small onion
225g lean bacon, rinds remove and coarsely chopped
90g fresh white breadcrumbs
1 tbsp fresh marjoram, chopped
finely-grated zest of 1 lemon
1 egg white
freshly-ground black pepper, to taste
chopped nuts (for coating)
paprika, for dusting
fresh chives, shipped, to garnish

Method:

Using a sharp knife, chop the oven, then place in a food processor with the bacon, breadcrumbs, marjoram, lemon zest and egg white. Season to taste with black pepper and process briefly, until the ingredients are just blended.

Divide the bacon mixture into 8 equal portions and form these into fat sausages around skewers.

Scatter the chopped nuts onto plates and roll the koftas in these to coat, then dust with a little paprika.

Place on an oiled barbecue rack over hot coals and cook for 10 minutes, turing frequently. Transfer to a large serving plate and serve immediately, garnished with fresh chives.
