Attar Syrup

This is the classic Middle Eastern syrup that Arabs typically pour over most sweet things. This is essential for any Middle Eastern cookery and will keep for a long time in the refrigerator.

Ingredients:

600g sugar
360ml water
1 tbsp lemon juice
1 tsp rose water (or orange blossom water)

Method:

Combine the sugar and water in a pan. Heat until the sugar dissolves then add the lemon juice. Bring the mixture to a boil and continue cooking, stirring occasionally, until the syrup thickens slightly (about 10 minutes).

Take off the heat, stir in the rose water then set aside to cool. Pour into a jar, seal and store in the refrigerator until needed.
