Atchar

Atchar is a traditional Southern African recipe for a classic condiment of mangoes and spices with honey and balsamic vinegar thickened wth cornflour (cornstarch). The full recipe is presented here and I hope you enjoy this classic Southern African version of: Atchar.

Atchar derives from the Indian influence on South African cuisine. In Hindi it is spelled Achar, a word that means 'pickle'.

Ingredients:

1.5kg unripe green mangoes, peeled and chopped

4 tbsp garlic salt

3 tbsp chilli powder

2 tbsp tsp ground cumin

1 tbsp ground coriander

3 tbsp curry powder

350ml honey

500ml balsamic vinegar

100g cornflour

2 tbsp black mustard seeds

1 hot chilli, finely minced

350ml extra virgin olive oil

Method:

Add all the ingredients (except the mangoes and oil) to a large pot. Bring to a simmer and cook until the mixture thickens then add the mangoes and oil and mix well.

Allow to cool and refrigerate for at least 12 hours before using.
