Green seasoning is ubiquitous in Caribbean cookery it’s the typical marinade for all meats and fish. Each island has its own variation and you get more or fewer local ingredients with the inclusion or omission of chillies. Shado beni (culantro) is ubiquitous in its use, probably because this ‘sacred herb’ is pretty much ubiquitous in its presence across the islands. The name derives from the French Chardon Béni (literally "blessed weed/herb"). The requisite fresh herbs can commonly be purchased over the internet in the UK/US these days and typically it originates from Turkey/Thailand or Mexico. Some Caribbean curry powders also contains fevergrass (lemongrass) as an aromatic component.

Ingredients:

1 onion, coarsely chopped
12 garlic cloves, coarsely chopped
1 green bell pepper, coarsely chopped
5 spring onions (scallions), coarsely chopped
1 bunch thyme, leaves picked
3cm (1 in) piece of ginger
1 bunch coriander (cilantro)
1 bunch parsley
1 bunch shado beni (also known as shadoe beny)
Juice from 2 limes

Method:

In a food processor combine the onion, garlic, bell pepper, spring, thyme leaves and ginger. Pulse to chop then process until chopped very fine.

Now add the coriander (cilantro), parsley and shado beni, followed by the lime juice. Blend thoroughly, adding a little water at a time until the green seasoning reaches the desired consistency (about 200ml [3/4 cup]).
