There are different styles of curry powder in the Caribbean, with the French islands having their own distinct version. Jamaican curry powder tends to be more fiery with the use of more mustard powder and fennel seeds. Whole spices are rarely, if ever, used in Caribbean curries. It is usually only ground curry powder and occasionally someone might start it off with some whole cumin seed.
Caribbean curry powder usually has a higher concentration of sweet spices like cinnamon, nutmeg, clove and cardamom and typically has a strong cumin flavour. The combination of turmeric and mustard powder typically gives a bright yellow colour.

Ingredients:

2 1/2 tbsp turmeric ground
1 tbsp ground coriander seeds
1 1/2 tbp ground cumin seeds
2 tbsp ground allspice
1 tbsp ginger ground
1 tbsp ground yellow mustard seeds
1 tbsp ground cinnamon
2 tsp ground cardamom
1 1/2 tsp black pepper (you can use white pepper)
¼ tsp ground cloves
1 tsp nutmeg ground
1/2 tsp scotch bonnet pepper ground (optional)

Method:

Simply mix all the ingredients together in a bowl then turn into a jar, secure the lid and keep in a cool, dark, cupboard. This curry spice blend will keep for up to 6 weeks.
