Apple Nut Cobbler: A British recipe for a classic desert of apple wedges with a nutty cobbler topping.
Ingredients:
4 large, green, apples, peeled and cut into 12 wedges each
4 tbsp fig jam
1 tbsp lemon juice
For the Batter:
2 eggs, lightly beaten
2 tbsp soft brown sugar
1 tbsp golden syrup (corn syrup)
1 tbsp fig jam
4 tbsp buttermilk
50g (4 tbsp) butter, melted and cooled
100g (3 1/2 oz) honey-roasted peanuts, coarsely ground
45g (1/3 cup) self-raising flour
For the Topping:
50g (2 oz) honey-roasted peanuts, coarsely ground
2 tbsp soft brown sugar
Method:
Brush a shallow 2l (8 cup) capacity rectangular ovenproof dish with melted butter then arrange the apple wedges to cover the base of the dish. Mix the jam and lemon juice in a small saucepan. Heat gently, stirring constantly, until the jam has melted then pour over the apples.
Transfer the apples to an oven pre-heated to 180°C (Gas Mark 5) and bake for 15 minutes, or until the apple pieces are hot.
In the meantime, beat the eggs for the batter in small mixing bowl with an electric whisk until thick and pale (about 5 minutes). Gradually add the sugar, beating constantly until dissolved and the mixture is pale golden and glossy. Add the syrup, then beat until combined.
Transfer the mixture into a large mixing bowl and using a metal spoon fold in the jam, buttermilk, butter, peanuts and sifted flour. Work quickly and lightly and do not over-mix the batter.
Spoon the resultant mixture evenly over the hot apples. Smooth the surface and sprinkle over the combined topping ingredients. Return to the oven and bake for 20 minutes, or until a skewer inserted into the batter emerges cleanly.
