Ingredients:
3.75l apple juice
105g sea salt
120ml runny honey
105g granulated sugar
35g brown sugar
1 whole turkey (about 6kg)
Method:
Combine the salt, honey and sugars with 500ml of the apple juice in a pan. Heat until dissolved then take off the heat, stir in the remaining apple juice and set aside to cool. Add the turkey to a large container then add the cooled stock, topping up with just enough water to cover the bird (if needed). Set aside in a cool place to marinate for 24 hours. After this time drain off the stock mixture then cover the bird with cold water and set aside for 10 minutes. Again drain the bird then rinse thoroughly both inside and out with running water. Pat dry with paper towels then set in the refrigerator over night.
The following day you can either smoke the bird or you can roast using the traditional roast turkey recipe.
