Apple and Cinnamon Muffins

This is a classic Autumnal muffin with apples baked into a cinnamon flavour batter. These muffins are topped with a crushed sugar and cinnamon mix before serving. Any firm-fleshed fruit can be substituted for the apples to make a whole range of variants.

Ingredients:

1 egg, beaten
120ml (1/2 cup) milk
50g (1/4) cup butter, melted
3 tbsp caster sugar
150g (1 1/4 cups) plain flour
1 1/2 tsp baking powder
pinch of salt
1 1/2 tsp ground cinnamon
2 small eating apples, peeled, cored and finely chopped

For the Topping:
12 brown sugar cubes, coarsely crushed

Method:

Beat together the egg, sugar, milk and melted butter in a bowl with a wooden spoon until well combined.

Sift in the flour, baking powder, salt and 1/2 tsp of the ground cinnamon. Add the apples and mix roughly together.

Line the wells of a large 6-cup muffin tin with papers and divide the cake batter between them. For the topping, crush together the sugar cubes and the remaining cinnamon. Sprinkle this mixture over the muffins then transfer to an oven pre-heated to 200°C (400°F, Gas Mark 6) and bake for about 30 minutes, or until the muffins are well risen and golden brown on top. Turn the muffins out onto a wire rack to cool.

These muffins can be served warm or cool and are equally as good for breakfast or tea time.

The apples can be substituted with any fairly firm fruit, such as pears, mangos, apricots, peaches, plums or rhubarb.
