ANZAC Biscuits: Classic New Zealand recipe for a classic biscuit (cookie) made with coconut and rolled oats in the batter, shown as a group of eight on a plate.

Ingredients:

145g plain flour
150g sugar
180g coconut
180g rolled oats
100g utter
1 tbsp golden syrup (corn syrup)
1/2 tsp baking soda
2 tbsp boiling water

Method:

Mix the flour, sugar, coconut and rolled oats together. Meanwhile melt the butter and golden syrup in a saucepan. Dissolve the baking soda in the boiling water and add this to the butter and golden syrup mix. Make a well in the centre of the flour and stir-in the syrup mixture. Mix well, grease a baking tray and place rounded tablespoons of the mixture some 3cm apart onto the tray.

Bake in an oven pre-heated to 180°C (160°C fan/350°F/Gas Mark 4) for 15–20 minutes.
