Ansjovisfisk (Fish with Anchovies) a Classic Swedish recipe for a dish of fish cooked in an anchovy, cream cheese and chive sauce.
Ingredients:
600g fresh fish fillet (eg cod, or saithe)
3/4 tsp salt
1 small tin (about 50g) anchovy fillets
butter
250ml soft cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
3 tbsp chives, chopped
Method:
Divide the fish into 4 equal-sized pieces and salt each piece lightly.
Chop the anchovies finely.
Heat the butter in a large frying pan, add the fish and cook until nicely coloured on all sides. Pour in the cream cheese and the chopped anchovies then stir in the chives.
Bring to a simmer and cook gently over low heat for about 6 minutes, or until the fish is just cooked through.
