This is a classic recipe from the 1930s for a dish of layered potatoes and butter that's oven baked until cooked through and set.
Ingredients:
500g potatoes (choose long, uniform ones)
250g butter, melted
salt and freshly-ground black pepper, to taste
4 tbsp parsley, chopped, to garnish
Method:
Peel the potatoes then cut crossways into thin slices. Wash the potatoes to remove any excess starch then dry carefully in a clean tea towel.
Butter a round, oven-proof dish (about 18cm in diameter) then arrange the potato slices in the base as overlapping circles. Season to taste with salt and black pepper then drizzle a few tablespoons of butter on top. Now add another layer of potatoes, season and drizzle butter over the top. Continue in this fashion until all the potatoes are used up and the dish is full.
Cover with foil then transfer to an oven pre-heated to 200°C. Bake for about 30 minutes, or until the potatoes are tender then pour off the excess butter (save for later use). Invert the potato mould onto a hot plate and allow to come out of the baking dish. Garnish with the parsley and serve.
