This recipe is for a classic São Toméan accompaniment of boiled and mashed bananas. These are typically served with fish dishes.
Ingredients:
10 bananas (these should be under-ripe)
Method:
Wash the bananas, but do not peel. Place them whole in a large pan and cover with water. Bring to a boil, reduce to a simmer, cover and cook for about 40 minutes, or until the bananas are tender all the way through.
Once cooked, drain the bananas, peel, and mash with a fork.
Traditionally this is served as an accompaniment to fish, particularly fish stews and grilled fish.
