Aloco is, essentially, an accompaniment made from diced plantains that are fried in oil until the outside is crisp.
Ingredients:
4 ripe plantains
100ml red palm oil
Method:
Peel the plantains and cube the flesh.
Heat the palm oil in a pan, and when hot add the plantain pieces. Fry until cooked through and nicely browned and crisp on the outside (about 10 minutes).
Serve hot, seasoned with a little salt, as an accompaniment.
