Almond Biscotti: Classic Italian recipe for a crisp biscuit (cookie) containing almonds in the batter, served piled on a plate.
Ingredients:
280g white sugar
400g plain flour
1/8 tsp baking soda
1/8 tsp salt
2 eggs, beaten
1 tbsp water
1 tbsp butter
1 tbsp vanilla extract
1 tbsp almond extract
120g whole, unblanched, almonds
Method:
Combine the flour, sugar, baking soda and salt then beat-in the eggs, water, butter, vanilla and almond extracts until just blended.
Stir-in the almonds and turn the dough onto a lightly-floured work surface. Divide and roll into two logs about 5cm in diameter. With a sharp knife set at an angle cut sections 1cm wide. Place these on a greased baking tray and put in an oven pre-heated to 150°C (300°F/Gas Mark 2). Bake for about 25 minutes, until the biscotti are browned and crunchy.
Allow the biscotti to cool completely then store in an air-tight container.
