Ingredients:
400g dried apricots
200g sugar
100ml water
1 tbsp lemon juice
1 tbsp orange flower water
Method:
Combine the sugar, water and lemon juice in a pan, bring to a boil and simmer until all the sugar has dissolved.
Add the apricots and cook until the apricots are tender and the syrup is thick (about 20 minutes). Either use immediately or allow to cool, transfer to a jar, seal and store in a refrigerator.
These apricots are often used as a garnish for stews and tagines during Ramadan where the sugars aid in replacing the energy lost during the day.
