Adjika (Paprika Sauce)

Adjika is a classic Abkhazian sauce usually served to accompany meat or fish.

Ingredients:

2 garlic cloves, finely minced
3 tbsp sweet paprika
2 tsp hot paprika
1 tsp ground coriander seeds
1/2 tsp young fenugreek, minced
1/2 tsp ground caraway seeds
1 tsp walnuts, grated
salt, to taste

Method:

Mix all the ingredients in a mortar, pounding until it forms a thick paste.

Scrape into a small bowl then mix in water (up to 1 1/2 tbsp) until the sauce reaches your desired consistency.

Serve to accompany meat or fish dishes.
