I love mince pies for Christmas, always have done. My wife, however, is not a great fan. She may have one or two with a glass of wine but that’s the limit. Now, the air fryer cooks pies very well, and is really good for smaller portions. I also use individual muffin-type cups (metal or silicone) for these so I can crowd more in the air fryer. The basis for this recipe is my sweet air fryer pastry dough, except that I substitute 1 tsp of the butter with 1 tbsp good quality olive oil as this gives a lighter dough and the fruity flavour complements the filling.
Ingredients:
500g (1 lb)
Air Fryer Sweet Pie Dough
350g (2/3 lb) Mincemeat
1 Small Egg, beaten, for egg wash
50g (1 ¾ oz) Icing (Confectioners’) Sugar optional
Plain Flour
Method:
Prepare the pastry (pie dough) according to the recipe then transfer to the refrigerator to chilli.
Flour a rolling pin and a clean work surface. Roll out your pastry and using pastry cutters, cut out to the ideal size (you can either use muffin cups for deep mince pies or tart tins for larger but shallower versions). You will need a larger circle for the base and a smaller circle for the lid.
Use the pastry to line your muffin tins and add a generous dollop of mincemeat to each one. Add another circle of pastry over the top as a lid and use the tines of a fork to press down and seal so that no mincemeat will escape during cooking.
Add an egg glaze to the top of your mince pies with a pastry brush then use the tines of a fork to prick steam holes then transfer to your air fryer. Air fry for 15 minutes at 180°C (360F) until the filling is piping hot and the pastry is golden.
You can either eat warm or allow to cool completely before storing. If desired you can sprinkle icing sugar or a little caster sugar on top to decorate.
