This is one of the classic British pasties, containing potatoes, onion cheese in a sour cream base.
Ingredients:
335g (1 batch)
Savoury Air Fryer Pastry (Pie Crust)
3 Small Potatoes
1/4 Medium-sized Onion
2 tsp Extra Virgin Olive Oil
2 tsp Sour Cream
20g (2/3 oz) Grated Cheddar Cheese
20g (2/3 oz) Grated Mozzarella Cheese
Egg Wash (1 egg whisked with 1 tbsp milk or water)
2/3 tsp Mixed Herbs
Salt and freshly-ground black Pepper, to taste
Method:
Peel and dice your potatoes into small chunks. Peel and thinly dice your onion. Transfer both to a mixing bowl with the extra virgin olive oil, mixed herbs and salt and pepper. Mix with your hands and then place in the air fryer.
Air fry for 12 minutes at 180°C (360F) and when the machine beeps check with a fork that the potatoes are tender.
Return the potatoes and onions to the bowl and combine with all the other ingredients, including the sour cream. Mix with a fork.
Roll out your pastry and then use a side plate as a and cut out your circles. You might have to roll a second time to get three pasty circles.
Working one at a time, place a circle of pastry on your work surface. Load 1/3 of the filling on half the pastry, making sure you don’t overfill it. Lift the other half of the pastry over the filling, completely enclosing it.
Crimp the open ends of the pastry using your thumb and forefingers to plait the two ends together. Continue plaiting decoratively until the open ends are completely closed.
Pierce the tops of the pasties with the tines of a fork to make steam holes. Line your air fryer basket with foil then carefully transfer the pasties inside. Brush the tops with egg-wash.
Air-fry for 8 minutes at 200°C (400F) until the pastry is golden and the filling is piping hot.
Serve immediately.
