Just to show that you can make great desserts in an air fryer, here’s a recipe for a bread and butter pudding. I’m cooking this in classic British style, but upping the ante slightly with Christmassy flavours. You can use just about any bread for this, but it needs to be on the stale side. White bread, brown bread, baguettes, brioche, panettone, croissants and hot-cross buns all work well. I’m using the leftovers of a white loaf here, though. You can use any oven-proof dish for the pudding as long as it fits inside your air fryer.

Ingredients:

4 Slices Stale Thick Sliced Bread
butter for spreading
marmalade (optional)
3 Large Eggs
240ml (1 cup) Double Cream
70g (1/3 cup) Caster Sugar
1 tsp ground Cinnamon
1 tsp vanilla extract
120ml (1/2 cup) Semi Skimmed Milk
160g (1 cup) Raisins
2 tbsp Butter
Butter or oil for greasing
Icing Sugar, for dusting (optional)

Method:

Crack your eggs into a bowl, then beat in the cream, sugar, vanilla, and cinnamon with a fork.

Cut your bread into big chunks. I really like the flavour of marmalade in my bread pudding, and I typically spread a little butter (it is a bread-and-butter pudding after all) followed by a little marmalade on my bread slices before cutting into chunks. Both are optional, but really lift the flavour.

Load the bread into the bowl with your custard and mix well until they are drenched in the batter. Set the bread aside to soak for 5 minutes.

Prepare your air fryer by pre-heating to 190C (380F) for 5 minutes. Take an air-fryer proof dish (I have a metal basket that fits inside. Either grease with butter or spray with extra virgin olive oil and then brushing with a pastry brush.

Load the bread into the basket then add the raisins, any leftover custard and the milk and mix well.

Set the basket in your air fryer and dot the top with small pieces of butter.

Air fry for a further 10 minutes at 200°C (400F) or until the custard is set and the top of the pudding is golden. I like to finish mine with a grating of nutmeg before serving.

The great thing about bread pudding in the air fryer is you can alter the spicing for seasonal matches; such as pumpkin pie spice for Halloween and mixed spice/ground ginger for Christmas.

If desired, you can also dust the top with icing (confectioners’) sugar before serving.
