Afrikanisches Pistaziendessert (African-style Pistachio Dessert) is a traditional Namibian recipe for a classic dessert of pistachios in a condensed milk and water base thickened with cornmeal served as a dessert. African-style Pistachio Dessert (Afrikanisches Pistaziendessert): a Namibian recipe for a ground pistachio mix in a condensed milk and water base served as a dessert.
Peel the pistachios (discard the outer shells) then add to a pan of boiling water and blanch for 1 minute. Drain then rub the nuts in a coarse cloth to remove as much of the inner membrane as possible.
Dry-fry the pistachio nuts over medium heat for about 10 minutes, or until evenly toasted all over. Turn into a food processor and chop finely. Add the condensed milk, water and cornmeal then blitz in the food processor to mix before scraping into a saucepan. Bring to a boil over gentle heat, stirring constantly.
Now continue cooking, stirring constantly, until the mixture has thickened. When nice and thick take off the heat and allow to cool slightly then turn into dessert bowls or glasses.
Garnish with the walnut halves and peanut brittle, then serve.
Note that this is the dish as it's traditionally made in Namibia, it may bee too sweet for most tastes. As an alternative, replace the sweetened condensed milk and water with 200ml single cream and 400ml milk and sweeten to taste with sugar.
